Owners must clean and disinfect commercial ice machines according to the guidelines set out by the machine’s manufacturer. A regular cycle of cleaning and sanitizing an ice machine can also extend its lifespan.  

Clean and sanitize the evaporator section and waterside components:

Commercial ice machine manufacturers set forth maintenance guidelines that owners must follow. When cleaning an ice machine, disassemble, soak, and hand-clean as many components as possible. Remove all ice, and clean and sanitize the storage bin. Then clean the underside of the machine, all drain lines, and the outside of the fin or dispenser. Sanitize thoroughly, following the manufacturer’s guidelines.   

Replace all filters in the water filtration system:

Water filtration is necessary to reduce the amount of dirt, minerals, and sediment that enter an ice maker. It is standard to replace the filter at least twice a year.  Clogged filters lead to smaller, malformed ice cubes. Challenging environments may require additional water filtration. Analysis of the local water conditions will help determine the kind of filtration that is needed. 

Additional weekly and monthly cleaning:

Once a week, to inhibit mold growth, clean the ice machine’s exterior surfaces using diluted bleach.

Once a month, rinse the ice machine’s air filters with hot water. When an ice machine’s filter is clogged, it will decrease the performance of the ice maker. Never bang on the air filter or place it in a dishwasher to clean it. Both of these will permanently damage the filter.   

Semi-annual remote condenser coil cleaning:

Deep clean the ice machine at least twice a year to ensure the hard-to-reach areas of the bin are clean. A reputable ice machine technician will ensure the best service.  

Remember, if the ice machine is housed in a dusty or yeasty environment such as a warehouse, bakery, or brewery, it will need to be cleaned more frequently.

The technician will be looking at the space for the following:

  • A room with a steady temperature between 45 and 95° F

  • A minimum of one foot space on all sides of the machine to prevent hot air from being trapped. Remember that this guideline may change based on the machine type and environmental conditions.  

  • A floor drain within 6 feet of the ice machine. Note: for every foot of drainpipe, there must be a ¼ inch drop

For electrical needs, commercial ice machines need:

  • A 110V machine will require a 20-amp circuit

  • A 220V machine may require a 30-amp circuit and a 4-wire system (i.e., dedicated neutral) 

For water supply needs, commercial ice machines need:

  • A water line capable of delivering 5 gallons of water per minute with a dedicated shut-off valve within 6 feet of the machine

  • Machines below 1300 lbs require a ⅜ inch water line

  • Machines at or above 1300 lbs require a ½ inch water line
